This is a delicious dinner we had last night — cheesy polenta with sauteed greens and two sunny-side up eggs layered on top. Comforting, pretty, and delicious!
This looks delicious. I have only tried cooking polenta once but had no idea what I was doing. I was disappointed in the results and have shied away ever since. Didn’t know to add cheese. I think I should do some more research and try again. 🙂
The one time I made it, it didn’t turn out well for me, either! But my mother-in-law is Italian and judging by my polenta experiences in the past at her house, she has mastered it! She always adds cheese, and cream, lol. It’s very decadent but amazing.
Great idea, Maria. I love greens, and I often place them between eggs and toast. I’ve never tried that combo with polenta before…I’ll probably like it very much.

I have never tried greens between eggs and toast, but that sounds super good too! I bet kale would be yummy. 🙂
